Myra’s Kale Kasha Yum!

So excited to share another guest post with you guys! Today’s Post is from Anna King.. a local lover of Jesus, Myra’s Garden Veggies, the outdoors, and deliciously fresh food!  Myra and Anna both share a love for throwing together creative foods.. especially when Kale is involved 🙂 Hope you enjoy this fun recipe that Anna is sharing with us today!

I learned to cook mostly from watching my mother cook as a kid. I rarely saw her pull out recipe cards or cookbooks.. Now baking is a totally different ballgame! hehe. In those days, there was no referring to Google or Pinterest for a quick reminder… In my memories, she is the queen of on-the-fly cooking! I like to think my cooking style takes after hers. And I’d like to say I have a decent sense of what things go together. I look up recipes more for ideas than for a how-do I cook all this stuff in my fridge?

My MO is usually to Google the ingredients that I have on hand and go from there. That is how this recipe inspiration started… I had been down to Myra’s garden that week to harvest a few beauties, the main attraction of which was kale!

So today I’m using Kasha.. Kasha is a delicious and much more nutritious alternative to white rice or noodles, etc. It is a high protein, vitamin-packed grain also known as buckwheat! Its natural nutty flavor really works magic in combo with the almonds in this recipe. For any of you readers from Bay City, TX, our H-E-B carries Wolff’s Kasha brand on the “special order” shelf that faces the eggs.

 For this recipe you will need:

2½ cups broth (any type) or water

1 cup kasha

1 egg

2 TBS butter or margarine (optional)

1-2 bunches of kale washed and chopped to 1in pieces

1 lemon zested and juiced

2 scallions diced

1 TBS olive oil

¼ cup roasted or toasted (see below for how-to) almonds*

salt and pepper to taste (or my hubby and I prefer GARLIC SALT to taste. Everything is better with Garlic Salt!)

 *to toast the almost, put them in a small pan over low heat, stirring occasionally until golden brown

1. Combine lemon zest, lemon juice, scallions, olive oil, and almonds in a bowl and set aside.

2. Heat liquid to a boil in a pot large enough to accommodate your kasha and the amount of kale you’ll be adding. I use a tall 4½ quart pot and fill it to the brim with kale. It will cook down!

3. Lightly beat egg in bowl with fork. Add kasha, stir, to coat kernels.

4. In separate medium-size skillet or saucepan, add egg-coated kasha. Cook over high heat 2 to 3 min., stirring constantly until egg has dried on kasha & kernels are separate.

5. Add kasha to the boiling liquid. Add kale on top, but DO NOT STIR. Cover tightly and reduce heat to medium low to simmer 8 to 11 minutes until kale is cooked down, kasha kernels are tender & liquid is absorbed.

6. Add your bowl of zest, etc. as well as butter or margarine if you choose and the GARLIC SALT to taste. Stir until combined

7. Enjoy!!

Motivation Monday: You CAN Achieve Your Goals.

I know that this is the time of year where everyone is making goals and implementing changes. So I’m joining in on the chorus too! I’ve been yearning for the willpower.. the strength.. the commitment.. the discipline to take better care of my own body.. my one life.. heck why not? We only get one run at things right?

I’ve told myself that time and time again.. through the headaches, dry eyes, tummy-aches, and sleepless nights. Nothing ever seemed to changed though. I’m one of those people other people look at and say.. “You don’t need to lose weight, You don’t need to get healthy, You are already skinny.” That’s just it though. It didn’t seem to matter anymore. Even though I am skinny by societies terms, my body was constantly getting sick.. and by constantly I mean ever other week I was in excruciating pain of some sort that left me in bed for hours on end. My body felt toxic.

I thought I was enjoying my life and the foods that this world has to offer. I feel like I was lying to myself. What’s so enjoyable about sore eyes and migraines? How can I have fun with an aching body and sinus drainage? I think you get the pic.

What did I do to make a change? … I prayed. I prayed and told God that I didn’t have the strength to live a healthier lifestyle on my own, with my sugar cravings-love for bread-and all things dairy… I couldn’t turn the corner without giving into the next food induced temptation.

I prayed for what seemed like a while. But, I think I actually only really prayed about it a few times over a period of a few months. He took away my addiction to sodas a little over a year ago. And I’ve basked in the greatness of how good it felt to be freed from those pesky little devils. Honestly once I got past the “I need a coke” it turned into “I don’t want a coke”.

I asked God, “Thank you for taking away my desire for sodas.. Will you please take away my desire for gluten, sugar, and dairy? I know I’m too weak to give it up, and I know you are wayyy more than capable enough to take it away.”

I figured one day He would, but I didn’t know when.. Until last week.. I woke up feeling totally crappy Monday morning, and after I began to feel better it just clicked.. It was time to make the change. So I’ve sworn to dairy-free, sugar-free, and gluten-free foods, a somewhat easier way to describe this is called Paleo.

My mind has changed from what I can’t eat, to what I Can Eat! And believe me, once you start to focus on everything you Can Eat.. the options are actually endless haha. It’s like there’s all this food out there, ripe for the picking.. and I Can Eat It! By ripe for the picking I mean fresh foods, and honestly it’s the best way to go. Your body will love you for it.

What exactly am I eating? Just this week I’ve had Paleo Hamburger & Cabbage stir-fry, kinda like a substitute for “Chili-Mac” if you leave out the Herb Seasonings and Sour Cream.. and add Cumin, Chili Powder, and Garlic.

I’ve also made Mashed Cauliflower.. which has been an AH-maze-Zing substitute for the oh so dairy-filled mashed potato staple..

Crock-Pot Ribs (recommend using 1T of mustard and not 2), Oh and I made an exception for the sugar on this one… my favorite BBQ sauce from Hinze’s BBQ does have a little sugar in it. I’ll let you know if I find a paleo recipe for sauce that stands up to the taste bud test..

and tonight I’m have Paleo Fresh Taco Soup! Haven’t tried it yet but it literally took me 20 minutes to throw together and it smells delish 🙂

Garden Seeds are Trickling In!

I was so excited to announce last night that my first package of seeds came in! I am already beginning to plan where I want to plant them in my garden…. I’m even thinking that I may need to expand my garden! Eeeeeek 🙂

Basically what I’ve got right now are a few packages of seeds to be planted in February. Which is actually only a few weeks away, but I want to go ahead and get my raised beds ready for planting. As well as add a few along the fence line to plant beans, peas, you know those climbing sorta things 🙂 I have a 6’x8′ box full of herbs and a box of the same size ready for veggies. These boxes aren’t huge… so I’m considering forming and filling one to two more boxes in order to expand my garden area.

Fresh Milk from Healthyway Dairy

Just wanted to share a fun bit of information with you guys! Margarey Diaz shared some of her knowledge and super great tasting milk with us over the weekend. The raw milk she shared comes from Healthyway Dairy Farm in Santa Fe, Tx. Healthyway Dairy is a certified grade A raw milk dairy. They sell raw milk, along with eggs and raw milk products. When we visited on Saturday they also had Whipped Honey for sale! It came in Cinnamon and Original… I’ve never had this Whipped Honey they speak of, but it sounds delish 😉

You can find Healthway Dairy on Facebook, I just liked their page today! There’s some pretty cool information on their page… availabilities, updates on products they are out and when they will have them restocked. They are open Monday through Saturday from 7AM to 9PM, checking their Facebook page before you go over can be a great idea. They seem to post updates on a regular basis… like, in the past they’ve had chocolate milk, buttermilk, sour cream, yogurt, and kefir! Hope y’all enjoyed our little experience, I know I sure did! It’s that time of year y’all. The time of year we begin to gather together. Whether it be with family, friends, or a mixture of both… it’s a time to reflect on the things we have to be thankful for. I really really love this time of year, it most definitely brings back a good bit of my favorite memories…

Isn’t it great how good company and home-cooked food can warm the soul? Insert warm fuzzy feeling. The older I get the more I notice how little time we have… and how an even smaller amount of that time is spent loving on the people who mean the most… I’m so thankful we have the Holidays to come away from the hustle and bustle and stresses of life and truly enjoy each other.

This year I’ve been privileged to be a part of a “Friendsgiving”! Now this isn’t actually what they are calling it, but essentially it’s what it is 😉 Friendsgiving is a gathering of community to give back to the community. It’s a place to share what we’ve been blessed with throughout the year. Giving back to our communities can be through meals, gifts, celebrations…. Just gathering together and giving to your friends!

This weekend Blessing First Baptist Church is giving back to the community through a turkey dinner! On Sunday at 4pm in the Blessing Community Center they will be serving meals to their friends as an opportunity to share what God has blessed them with throughout the year 🙂 Would you guys like to join? Healthier Habits

So I don’t know if I mentioned how horribly, awfully, painfully, gut-wrenching kinda sick I was on Monday?? Ugh. It was one of the worst. Picture sick to your stomach, body aching, head hurting, feverishly uncomfortable, chills surging throughout your limbs… ya, it sucked. I felt toxic. I would normally classify myself as a decent eater. I love me some fresh home-grown homemade food, but every now and then (sometimes more than once a week) I gotta have my hamburger ATW with bacon and cheese. MMMmmmmmm…. good!

I always seem to pay for it afterwards though. I hadn’t really “cheated” over the weekend… that I can remember…. Needless to say this experience has now contributed to my #eatmyyard journey!

I’ve been working on the #planmygarden stage, and I’ve been struggling with what to plant?? Not necessarily for fall, cuz it’s a little late. But more like what do I want to plant to over-winter? What do I want to plant/eat in the spring? Today I made this super easy meal for lunch and it has got me thinking… I want egg & meat chickens (eventually), corn, French green beans (if possible) and black eyed peas! This is just a start, but as I cooked dinner last night, breakfast this morning, and lunch today I’ve been really inspired 😉

Last night was a pot of black eyed peas with bacon, celery, and seasonings… and skillet corn bread. This morning was bacon, toast with honey butter, and a fried egg sunny side up. Lunch today was chicken cubed and seasoned with garlic pepper, salt, and the juice of half a lemon… Stir fried that while I was cooking corn-on-the-cob, and boiling a pot of rice, I also stir-fried some green beans with minced garlic and onion! Let me tell you these little meals are simple but amazingly delicious!! The more I cook and expand my “usual” palate the more I realize what I want to #eatmyyard 🙂

What are we eating anyways?

Good morning guys, I hope y’all are doing well this morning. I’m feeling blessed today. Blessed to have been given another day, another chance to strive for Christ, another morning/afternoon/evening/&night to be amazed by my Savior who loves me! Currently loving Bethel Music’s Live Album, You Make Me Brave, it’s amazing too 😉

As I pulled over to take this picture, the smell of poopy compost blissfully floated across the air. Making it’s way into my truck… only to find that I was not blissfully unaware of the stinky ranky sensation that it created in my nostrils. Have you ever wondered what it is that they’re actually spreading on those fields? What’s actually coating those crops? What are we really eating from the veggie stand in our grocery stores? What are we eating in our restaurants? What are we actually eating anyways??

Well… I have wondered.

I think this marks the beginning of a journey for me. A journey into my own backyard. A journey into my not so tended to vegetable garden. A journey into a meat-ful backyard. A journey to answer these questions that pang through my mind with every bite that I take. How can I actually eat the vegetables that I plant? How can I raise meat? Better off yet, how can I even grow them??

The discipline of homesteading has yet to sink in for me, I love having my own food right outside my kitchen window… but it’s so much easier to just go out to the grocery or pick veggies out of Myra’s Garden. It’s a little bit harder to actually walk outside my kitchen door and tend to my own.

Hey guys! How about a little Food-inspo today? I love me some good home cookin’, cuz that means I get to eat good FOOD! haha.
