Hey guys! How about a little Food-inspo today? I love me some good home cookin’, cuz that means I get to eat good FOOD! haha. Eating is one of my favorite things to do, especially when my food is coming straight out of the “yard”. Here at Myra’s we’ve got a few laying hens, and they give us these beautifully delicious eggs! Sometimes there are soooo many eggs that I feel a little overwhelmed like…. What am I going to do with all these dang eggs??

Today I decided to make this special little samwich… my friend Margarey taught me how to make it when I visited her in Puerto Rico a few years back. I don’t know if this is actual “Native” Puerto Rican cuisine, but I feel a little more cultured every time I eat it!

Ingredients include:

  • Bread (2 slices)
  • Mayo (about 2 Tblsp’s)
  • Ketchup (about 1.5 Tblsp’s)
  • Butter
  • Ham
  • Eggs (2)
  • Slice of Cheese

I started out by taking the Mayo and Ketchup (Spicy or Regular), mixed them together in a bowl, and stirred. You can add a little more or less of either ingredient to suit your taste buds.

After you’ve got that mixed up crack a couple yard eggs in a bowl & stir’em up. Add a little salt’n’pepper if desired. Heat up some butter in a pan on low heat…I like to cook my eggs on low because I always seem to cook them a little over-done when I use a higher heat setting. Throw your eggs in the pan, and while you’re waiting pop your bread in the toaster.

When the bread is toasty, put it on your plate and butter it. Turn another burner on medium-low and heat up your Ham in a pan with butter, sear it for a minute or so on each side. While you’re waiting on your ham & eggs to cook, take your mayo-ketchup sauce and lather it on you buttery yummy crispy toast.

When your eggs are done cooking, scoop’em up and place them on your bread. Add your slice of cheese, top it with the seared ham, and… Wah-LaH!

There you have it… Steamy delicious Puerto Rican Ham & Egg Sam-wich! It seems that this sandwich was sooo good it disappeared into my mouth before I could take a picture of it…are these remnants enough evidence to convince you of it’s amazing-ness?
